Minimalism.

There has been a massive trend for Naples-style pizza in Sweden in recent years. Fluffy dough, good sauce and high quality toppings. No more bananas, peanuts or kebab on pizza. At least for a certain audience. Bar Minimal want to do their own interpretation right at Skanstorget. Let’s see about that!


Right at Skanstorget, on the backside of Haga, so to say, is Bar Minimal. The minimalist logo shows what to expect, a slice of pizza taken from a pizza pie. The interior looks like it’s coming right from Majorna, but I like that. It’s charming.

The menu is written on a blackboard near the entrance on a chalk board. It keeps on changing, but as a vegan, there is the option to receive a vegan Margharita or a vegan pizza with other toppings, possibly mushrooms and truffle oil and the likes.

The vegan Margharita was our option of choice. It’s made with a vegan cheese based on peas. Intriguing combination. You are advised to take one pizza for the party instead of two individual ones and then order more later. This is possibly done to serve more tables in a faster way rather than have long waiting times. Not a problem, I like this type of pizza eating.

So, after a short waiting time the vegan Margharita already arrived and we also got a side of olives. The side of olives was more a jar of olives, so someone was possibly a bit too excited when plating. The Margharita itself looked beautiful though.

The dough was on point, the sauce very fruity and the vegan cheese had an interesting touch and reminded a bit of aged parmigiano. Quite nice touch and not too overwhelming as vegan cheese can be.

Well composed, fast service and simply good pizza. Bar Minimal lives up to the name and gives you a quite minimalistic experience of a good pizza. Sometimes all you need.

In terms of pricing, it’s very fair. The Margharita comes at only 135 SEK, a vegan pizza with mushrooms (and what else) comes at 185 SEK, and the “jar of” olives come at 60 SEK. Only the drinks prices are a bit off with a whopping 85 SEK for alcohol free champagne or 60 SEK for an alcohol free beer.

The Verdict

Bar Minimal received quite some hype since they opened and they do live up to it. The pizza is great, and while not on the same level as for example Buono, it is one of the best in Gothenburg. The simple Gothenburg-style interior and the fast service make it even more of a nice experience. Additionally, it’s very fair priced for a vegan Margharita at only 135 SEK. Only downer is the infuriatingly overpriced glass of alcohol-free champagne at 85 SEK. That’s just a bit too far out, especially compared to buying price and other restaurants.

Still, it’s a great place for a vegan pizza!
