A Michelin star fine dining experience as a vegan? Rather often quite the risk, as many restaurants decisively focus on animal products and take the vegetables more as support. Restaurang Carbon on the other hand has a fully crafted vegan menu, and the attentive booker will see many dishes even being parts of the non-vegan menus. So, clearly, the kitchen crafts with strong focus on the plant-based cuisine.


The good impressions keep on giving even after seeing the vegan menu option. The booking process is clearly intented to make you comfortable and bring in your comments about allergenes or preferences. On the day of the booking, the restaurant even called to verify some things about the allergenes, which is beautifully reassuring.

The location is a bit odd, tucked away close to Odinsplatsen right across Vietnamhaket. I like the area, but it’s not your typical fine dining expectation. The place on the other hand is carefully furnished with attention to detail. You feel welcome and appreciative of the details. Only the music struck as a little bit odd with a selection of early 2000s pop and r&b. But maybe it’s an intentional vibe?

But we are here to eat. The food itself is inventive without becoming weird for the sake of being inventive. Beetroot, asparagus, fennel, pumpkin and other rather familiar ingredients are turned into surprisingly creative dishes, while still keeping one foot firmly in Scandinavian flavours and comfort. Eleven courses also gives the kitchen plenty of room to play, without every plate having to scream for attention. The biggest surprise, however, may have been the non-alcoholic drinks pairing. Carbon makes its own teas, lemonades and other creations, and these aren't just something nice to sip between courses. They are genuinely matched to the food and become almost as important to the experience as the dishes themselves. If you're already going for the tasting menu, I would absolutely add the pairing.

And then there is the service. It's as attentive and knowledgeable as you would expect from fine dining, with every dish and drink carefully explained, but thankfully without becoming stiff. The waiting staff has a lot of charm and humour to take the tension off seeing these art pieces of dishes. For all the precision happening in the kitchen, the experience somehow felt less like visiting a serious fine-dining institution and more like being invited into someone's home while they excitedly show you everything they've been experimenting with.

Of course, none of this comes cheap, you can expect to pay around 2000 SEK/person. But Carbon isn't really somewhere you go because you simply need dinner on a Saturday night. It's an experience, and one that shows just how complete and ambitious vegan fine dining can be when nobody treats the vegan menu as the alternative. The food was excellent, the pairing genuinely added something, and the whole evening simply felt special and simply inspiring.


The Verdict

Carbon is an experience rather than just another night out. What impressed me most is that vegan food here feels completely deliberate. Many of the vegan dishes are clearly creations the kitchen is proud of as they are, not alternatives made because someone asked for them.

The inventive 8-11 course menu, an excellent non-alcoholic pairing that genuinely becomes part of the food, and attentive but wonderfully charming service, makes this a beautiful experience. Carbon shows how good vegan fine dining can be when nobody treats vegan as a limitation.
