Noodle Master Taste of Xian Kitchen

4/5
I’m all tied up in knots over this.

As you might know by now, I’m a big fan of Asian cuisine in general. A dear friend and employee has been rambling on about Noodle Master at Hjalmar Brantingsgatan and that it’s one of their favourite places to go. They have nothing vegan on the menu, but worth a try, isn’t it, considering how vegan-friendly Asian cuisine in general is.

With it’s location right next to Kville Saluhallen, Noodle Master is both not directly visible, but also very close to main (foot) traffic. It looks a bit less impressive from the outside - and inside, but don’t get influenced by that.

Inside it is quite simple and nothing special, but you can hear a lot of Chinese being spoken around the tables, and that is always a good sign if you intend to eat at a Chinese restaurant. As mentioned already, the menu does not offer vegan options, but upon asking, they said it’s absolutely no problem and they can make a dish with tofu for us. Here’s the thing about noodle master: they are specialised in handpulled noodles, so you will always get that and the main difference lies in protein and sauce. In our case, we went for a stir fry and a soup.

Didn’t take long and we were greeted with our order. Thick and nice hand pulled noodles (Biangbiang) in a stir fry or soup with A LOT of tofu. Really nice!

How does it taste? Pretty good. The noodles are clearly the setpiece here, while the stir fry itself is pretty simple in terms of ingredients and sauce. There are condiments on the tables to spice it up though with some chili oil for example. The soup is even more simple, by being a bit of a plain broth and with the downside of the noodles loosing their signature bite in it. But quite alright for a comforting meal.

And all that comes at a price tag of 159 SEK per dish. Nothing to really say about that. It’s a big portion, it’s filling, and it’s simple and charming Chinese food.

Vegan Dish (Stir-fry, soup): 159 SEK

The Verdict

Noodle Master is hiding their vegan options by not naming them, but upon asking they will gladly provide you with a tofu-packed option - either stir-fry or soup. Their signature handpulled noodles (Biangbiang) are indeed a showpiece and if you take the stir-fry, you will get a nice bite to them, while indulging in a massive and tofu-packed portion. If you go for the soup, you will lose a bit of the noodle bite, but get a comforting, though simple, soup instead. All in all it’s clearly about the noodles and the dishes themselves are rather simple in taste, but there are plenty condiments on the tables. No need for Noodle Master to hide their vegan options, as they are in fact really worth visiting for.
